Veg Pulao Recipe


Delicious Veg Pulao

Ingredients:

  • 1 cup Basmati rice (soaked for 30 minutes)
  • 2 tbsp oil or ghee
  • 1 bay leaf
  • 1-inch cinnamon stick
  • 2 cloves
  • 2 cardamoms
  • 1 onion (thinly sliced)
  • 1 cup mixed vegetables (carrots, peas, beans, potatoes)
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1/2 tsp garam masala
  • 1 tsp ginger-garlic paste
  • 2 cups water
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. Heat oil or ghee in a pan. Add bay leaf, cinnamon, cloves, and cardamoms. Sauté for a few seconds.
  2. Add cumin seeds and let them splutter. Then, add sliced onions and sauté until golden brown.
  3. Add ginger-garlic paste and cook for a minute until the raw smell disappears.
  4. Mix in the chopped vegetables and cook for 2-3 minutes.
  5. Add turmeric powder, garam masala, and salt. Stir well.
  6. Drain the soaked rice and add it to the pan. Mix gently.
  7. Pour in 2 cups of water and bring it to a boil.
  8. Cover the pan and cook on a low flame for 10-12 minutes until the rice is fully cooked.
  9. Once done, fluff the pulao with a fork and garnish with fresh coriander leaves.
  10. Serve hot with raita or yogurt.
