Veg Pulao Recipe
Ingredients:
- 1 cup Basmati rice (soaked for 30 minutes)
- 2 tbsp oil or ghee
- 1 bay leaf
- 1-inch cinnamon stick
- 2 cloves
- 2 cardamoms
- 1 onion (thinly sliced)
- 1 cup mixed vegetables (carrots, peas, beans, potatoes)
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1/2 tsp garam masala
- 1 tsp ginger-garlic paste
- 2 cups water
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
- Heat oil or ghee in a pan. Add bay leaf, cinnamon, cloves, and cardamoms. Sauté for a few seconds.
- Add cumin seeds and let them splutter. Then, add sliced onions and sauté until golden brown.
- Add ginger-garlic paste and cook for a minute until the raw smell disappears.
- Mix in the chopped vegetables and cook for 2-3 minutes.
- Add turmeric powder, garam masala, and salt. Stir well.
- Drain the soaked rice and add it to the pan. Mix gently.
- Pour in 2 cups of water and bring it to a boil.
- Cover the pan and cook on a low flame for 10-12 minutes until the rice is fully cooked.
- Once done, fluff the pulao with a fork and garnish with fresh coriander leaves.
- Serve hot with raita or yogurt.
